Statement II : Invert sugar is formed during sucrose hydrolysis.
In the light of the above statements, choose the correct answer from the options given below -

Statement I analysis: Sucrose hydrolyses to D-(+)-glucose and D-()-fructose, not D-(+)-fructose. The sign of optical rotation flips for fructose during the hydrolysis. So the equation as written in Statement I is incorrect.
Statement II analysis: The hydrolysis mixture is called invert sugar because sucrose itself is dextrorotatory () whereas the equimolar product mixture is levorotatory (). The strong negative rotation of fructose () outweighs the positive rotation of glucose (), inverting the sign of net rotation. Statement II is correct.
