Given below are two statements :

Statement (I) : On hydrolysis, oligopeptides give rise to fewer number of -amino acids while proteins give rise to a large number of -amino acids.

Statement (II) : Natural proteins are denatured by acids which convert the water soluble form of fibrous proteins to their water insoluble form.

In the light of the above statements, choose the most appropriate answer from the options given below :

Solution

Peptide bonds link only -amino acids together, so hydrolysis of any peptide, whether a short oligopeptide or a long protein, can only ever release -amino acids. Proteins do not yield -amino acids on hydrolysis, so Statement I is false.

Fibrous proteins (such as keratin and collagen) are already water-insoluble because of their elongated, tightly packed structure. Acid-induced denaturation does not convert a soluble form into an insoluble one; it simply disrupts the secondary and tertiary structure of the protein. Therefore Statement II is also false.

Both statements are incorrect.
